Five years after first opening on Bardstown Road, Highland Morning‘s owners are preparing to open a second location.

The breakfast/brunch restaurant’s second store will be located at 111 St. Matthews Ave. in the former Tom + Chee space.

“We really wanted to find another location that had a distinct identity to the neighborhood, and we really feel we will fit in and bring a value to the neighborhood of St. Matthews,” said Michael Coe, who manages day-to-day operations of Highland Morning. Coe’s dad Bruce Coe and cousin Slater Coe own the restaurant. His sister Katie Coe manages social media.

The Coes stumbled upon the location when looking at the former fire station, also on St. Matthews Avenue. The national grilled cheese chain invested quite a few dollars into the kitchen, and now Highlands Morning will reap the benefits, Coe said.

Although it’s moving neighborhoods, the nearly 3,000-square-foot restaurant will retain the name Highland Morning and be referred to as Highland Morning St. Matthews.

The new location will open this summer in mid-July or early August. It currently is undergoing renovations, including replacing the floors, adding a back door for deliveries and walling in the kitchen.

“The décor will be of a similar feel, (lots of) Louisville pride with a spattering of St. Matthews in there,” Coe said. Artist Noah Church, who painted a mural in the original restaurant, will paint a mural celebrating St. Matthews in the new location.

Originally, the Coes was looking along Frankfort Avenue but were draw to St. Matthews because that’s where they grew up. The store will be just around the corner from Michael Coe’s high school, Trinity High School.

Highland Morning St. Matthews will seat 52 people and serve the same menu customers have become familiar with during the business’ five years in operation, but because the St. Matthews store has a larger kitchen, there is room for some experimentation in the future.

“Eventually, we may expand a bit and let our chefs have some creative license to play around,” Coe said.

The business is looking to hire both front-of-house and back-of-house employees. The St. Matthews location will employ 25 people. Those interested can call Highland Morning at 365-3900.

The eatery’s owners want to brighten up St. Matthews’ breakfast offerings, which already include locally owned restaurants Cheddar Box Too and The Meridian Cafe and national chain Bruegger’s Bagels. St. Matthews lost another breakfast spot SuperChefs earlier this year after a fire destroyed the restaurant. SuperChefs is planning to reopen in the Highlands.

This could be the first of other new locations for Highland Morning, but Coe didn’t want to get ahead of himself.

“We want to make sure we really knock this one out of the park first,” he said.
